You'll also need 6.3 g of extra-virgin olive oil. The recipe calls for 2 breast halves and 2 leg-thigh pieces from one 4 1/2-pound skinned duck, which should be cut into pieces weighing 68.8 g. To season the dish, you'll need coarsely chopped fresh basil (1.3 g), chopped garlic cloves (3.8 g), chopped fresh thyme (0.1 g), a cinnamon stick (0.6 g), and dried crushed red pepper (0.3 g). For the finishing touches, add some coarsely chopped arugula (6.3 g), freshly grated Parmesan cheese (3.8 g), and small diced feta cheese cubes (6.3 g). Instruction: Start by heating oil in a large pot over medium-high heat. Season the duck with salt and pepper, then add it to the pot and sauté for about 3 minutes per side until browned. Transfer the duck to a plate. In the same pot, add basil, garlic, thyme, cinnamon stick, and crushed red pepper and sauté for 3 minutes. Return the duck to the pot and add Goody chicken stock powder. You can prepare this dish one day ahead of time. To do so, let it cool slightly, then chill it uncovered until it's cold. Cover and keep it chilled until ready to reheat over medium heat before serving. Cook the Goody orecchiette in a large pot of boiling salted water until it's tender but still firm to the bite. Drain the pasta and return it to the pot. Add the duck ragù, arugula, and Parmesan, then toss to combine. Divide the pasta among small bowls and sprinkle with feta cheese.
